Naturally being a café, coffee is important to us, which is why in this month’s newsletter we want to talk all (well, almost) about coffee.
The mathematics…
We like to think of it like maths. Good coffee is the sum result of an equation.
Coffee beans (and roast) + machine + barista = good coffee
What does that look like at Mila’s?
Our coffee is sourced and roasted by the small, family owned business of Flor da Selva. Established in 1950, they use the traditional method of firewood to roast their coffee.
Our machine is a Nuova Simonelli.
And who’s behind the machine?
Say hi 👋 to Carlos!
Not only does he love serving our guests and putting a smile on their faces with his latte art, he’s also a great source of information about places to eat, drink and have a boogie around town.
But first, coffee! Well actually, first is opening Mila’s. Check out the video he made, giving us a peak into what takes place before the doors open for the day. And then, ahhh yes, the first morning drink. For Carlos, that’ll be an oat flat white, which he highly recommends pairing it with the banana cake for breakfast. Yes, you can eat cake for breakfast (it’s got fruit in it 😉)!
If you’re not much of a sweet tooth, you can order his favourite dish at Mila’s, the salmon poachies, which also happens to be the most popular dish on the menu.
When not at Mila’s you may find him in the city checking out the gastronomy scene. Why not ask him what some of his favourite restaurants are and any new trendy bars to be in the know, the next time you order coffee from him.
Which brings us to that very important question Carlos will ask you …
But what coffee?
Yes, it may sound that complicated 🤯 but it’s only because we do love our coffee. But worry not! Our baristas are here to help make your coffee just the way you like it. And if you need something cooler, order Carlos’ favourite summer drink, an iced oat matcha.
What’s the rush?
Take a seat in the corner table (Carlos says this is the best seat in the house) and even better, have your coffee in your own cup that you can leave on our wall of mugs ready for your next visit.
